What I like about this salad is that you don’t need to concern yourself about quantities. Add as many peaches and tomatoes as you will eat and as many or as few onions and bites of feta as you will enjoy.
Fresh basil – small handful – torn or thinly sliced
Feta cheese – cubed or crumbled (recently I started cubing since it looks tidier in the bowl)
SLICE tomatoes and peaches into thick wedges • I like twice as many peaches as tomatoes. Thinly SLICE red onion. ADD TO BOWL.
For the Dressing
1 tablespoon red wine vinegar
1 1/2 teaspoons olive oil
1 to 2 teaspoons honey
Generous pinch of salt
Generous grind of black pepper
Lightly DRESS your salad. Gently MIX. ADD cubed or crumbled Feta. FINISH with basil.
